The Company
The Serboni family have long been living on vine seasons and wine-ripening, almost a sort of pleasant and respectful dependence on the noble Vernaccia vine, made of love and care, of search for the best technologies and respect for history. In this perspective, today's owner Massimo Serboni managed to skillfully translate the long tradition of wine Vernaccia summarizing those important aspects that contribute to ennoble the final result in a sparkling unique in the world with three fermentations, the first cold bottled without pasteurization ensure fully the best quality. Sparkling wine with the Charmat method with a customized process developed by the Company itself, is the fruit of a vineyard property in the hills above Lake Caccamo, where the particular microclimate ensures the grapes a perfect state of ripeness. The magic of ripening and fermentation of the Vernaccia grapevines in winter , forst and snow, is the most charming part of the production. The secret of a good Vernaccia wine lies in the different amounts of “passito” (raisin wine) and October wine. The fragrant red froth gives evidence of a successful combination of good quality products.

We organize guided tours of the winery, followed by tastings for groups of 10 persons.
On request it is also possible to arrange, in our farm, snacks and dinners-tasting with the dishes and the wines that best represent the gastronomic culture of our land.
