How The Three Fermentations Happen

The first resulting from winemaking harvest, the second after the grapes dry naturally. Which they are placed on the racks, from October to January, when vinified with the base wine of October, thus undergoing the second fermentation. Processing continues in an autoclave where it is fermented wine and left two months being fulfilled as the third fermentation.

 

La vinificazione

The vinification of black Vernaccia di Serrapetrona dates from the fifteenth century, from here and from its long winemaking we understand how the stereotype of the typical product for excellence. Excellence that is recognized by the designation of origin DOC in 1971, and became in 2004 the first DOCG of Marche.

Serboni Dry

  • It is a sparkling wine composted with 50% raisin of vernaccia, 30% vernaccia grapes and 20% Montepulciano and Sangiovese grapes.
  • Appearance: red froth effervescent, intense ruby red color, fine perlage.
  • Smell: persistent, very ripe red fruit.
  • Combinations: roast, red meat, sliced ham and salami.
  • Alcoholic strenght: 12% vol.

Serboni Sweet

  • It is a sparkling wine composted with 50% raisin of vernaccia, 30% vernaccia grapes and 20% montepulciano and Sangiovese grapes
  • Appearance: red froth effervescent, intense ruby red color, fine perlage.
  • Smell: persistent, very ripe red fruit.
  • Combinations: tart.
  • Alcoholic strenght: 12% vol.

Serboni Coroncina

  • Characteristics: Oil of excellent quality with a high content of polyphenols
  • Aspect: green color very intense
  • Taste: very fruity, bitter pungent
  • Pairings: with grilled meats, vegetables, garlic bread
  • Production area: Is produced in the hills of the village of Serrapetrona, near the lake of Caccamo, where the microclimate ensures an ideal olives were ripening. The olive grove is located near the village of Borgiano to 550.
  • Collection system: harvested by hand from the middle of November until the first week of December

Serboni Grappa passita

This grappa single variety was produced for the first time in 1980, among the first in the history of a single grape variety in Italyand one of a kind for the use of grape raisin.Is obtained using the dried and fermented marc from the treatment of Vernaccia di Serrapetrona D.O.C.G. They are dried in order to separate the skins of grapes from grapeseeds and steam distilled with a discontinuous copper and steel.
